Humans have been eating eggs for thousands of years. Eggs are one source of protein. It doesn't make any difference whether the egg is Brown or White. It's the nutrient within the egg that matters,unless you are eating the egg shells. Then there might be some nutrient from the pigment.

Eggs are rich in many types of nutrients depending on the food that a hen is eating. This even makes a difference in the color of the yoke. Straight corn will produce a clear yoke, acorns will produce a green yoke and of course the rich orange yokes can come from many types of grains in your feed, it doesn't matter if you are feeding grains, organic feed, or allowing them to forage. You will most likely get a darker orange egg, as long as their feed has a variety of nutrients.

Nutrients in the egg are important. The embryo is the intended recipient of the yoke but if the egg is not fertilized by a rooster or if there has been no incubation period. Then there is no embryo. So your conscious can be clear, when you are eating an egg.

Feeding

We immediately start the chicks with an egg from our hens to give added nutrients, we also feed organic oat meal. For a family of 4 you only need 6 hens and you should be able to feed table scraps and not have to buy chicken feed.
